Easy Salmon Foil Bake

Foil bakes make for an easy, healthy week night dinner! Omega-3's are considered conditionally essential nutrients that are anti-inflammatory. Dietary recommendations include consuming fatty fish, such as salmon at least twice weekly. EPA and DHA (omega-3's) are beneficial for cardiovascular health and can improve and reduce elevated triglyceride levels, lower heart rate and blood pressure, reduce risk of heart failure, improve mood and cognitive function, as well as many other health benefits.


To make a foil bake, spray aluminum foil with non-stick spray, place vegetables of choice (asparagus, squash, zucchini, and red onion) inside, add lemon slices, sea salt, black pepper, and fresh herbs, such as dill over top a salmon filet. Drizzle with olive oil, fold and seal foil to enclose packet, and bake at 400 degrees for 12-15 minutes. Individual packets can be made for each person and makes for a speedy clean up!
